I know, I know… Valentine’s day was AGES ago (ok, only about 2 1/2 weeks ago), but since I’ve been a slacker on updating the blog, I’m just getting around to posting about it now.
While we are fans of going out to restaurants for many other occasions, I refuse to go out for Valentine’s day. Restaurants are crowded, and the “special” Valentine’s menu options usually don’t seem that special to me. So, we have made our own special Valentine’s dinner at home for several years now.
This year, we decided to do a fancy menu – here’s what we had:
Appetizer: Seared foie gras on top of multigrain baguette slices, topped with balsamic fig jam, and brie on crackers with balsamic fig jam
Salad: mixed greens topped with sliced roasted beets, candied walnuts, and goat cheese, with balsamic vinaigrette
Main: Duck breasts with fig & port sauce, herbed ricotta soufflé, and roasted butternut squash
Dessert: no-bake chocolate custards with fresh strawberries
It was fantastic! A little bit of work, but everything came together nicely. And I discovered how simple the ricotta soufflé and the chocolate custard were to make, so I’ll probably be making both of those again soon!
