For our Valentine’s dessert this year, I wanted to make something tasty and easy, but preferably make-ahead. After searching through many, many recipes, I finally settled on this one. It was delicious, and was even more fun served in mini martini glasses! So fun!
No-bake Chocolate Custard
Slightly adapted from Food & Wine, Feb 2006
1/4 cup 2% milk
2 tablespoons sugar
1 large egg yolk
3 ounces bittersweet chocolate, finely chopped, plus shaved chocolate, for serving
Pinch of salt
2 tablespoons unsalted butter, softened
1. In a small saucepan, combine the milk and the sugar and heat until steaming and the sugar is dissolved. Put the egg yolk in a small bowl and gradually whisk in the hot milk. Return the mixture to the saucepan and cook over moderate heat, whisking constantly, until slightly thickened, about 2 minutes.
2. Off the heat, add the chopped chocolate and salt and whisk until smooth. Whisk in the butter. Pour the custard into 4 shallow bowls (or small martini glasses) and refrigerate briefly, about 5 minutes.
3. Top with whipped cream, if desired. Sprinkle chocolate shavings on top, if desired, and serve.
Make Ahead: The chocolate custards can be prepared and refrigerated overnight. Serve the custards chilled or at room temperature.
