Sauteed Swiss Chard

I love swiss chard, and I miss growing it in the garden (our plants finally died this summer). But, luckily I found some chard at one of the farmer’s markets this weekend, so I just had to buy it!

We made this as a side dish to Creamy White Bean Soup with Ham, so I just wanted to cook it simply. It was fantastic, and it was the perfect complement to the soup.

This is not really a recipe, but more of a technique. You can use regular swiss chard, red chard, or rainbow chard.
Sauteed swiss chard

Sautéed Swiss Chard
Servings vary (about 2-4 servings per bunch of chard)

Swiss chard, stems removed
onion, chopped (about 1/2 medium per bunch of chard)
olive oil (about 1-2 tsp per bunch of chard)

Thoroughly wash chard leaves, then chop. In a medium or large skillet, begin cooking the chopped onion in olive oil. Once the onion is beginning to brown, add in the chard.

Saute chard until wilted – about 5 minutes. Add salt & pepper to taste. Serve hot.
