Goat Cheese with Raspberry Chipotle Sauce

This is another favorite from our recent Christmas party – but I’ve made it for other occasions before, too! It’s always a hit.

This idea (not really a recipe) came to me when I saw a recipe for “Pepper-Glazed Goat Cheese Gratin” in Food & Wine… The recipe basically instructed you to make your own pepper jelly to put over goat cheese, then bake and serve with crackers.

So, I had one of those lightbulb moments… In my pantry, I had a bottle of Fischer & Weiser (a local TX brand) Raspberry-Chipotle sauce – which was all-in-all *VERY* similar to a pepper jelly (BTW they also make a jam version). So, voila – I poured the sauce over the goat cheese, baked it, and it was fabulous! Enjoy!

Goat Cheese with Raspberry Chipotle Sauce
Servings Vary

Ingredients:
1 pound goat cheese (chevre)
1/2 bottle Fischer & Weiser Raspberry chipotle sauce (or 1/2 jar jam, if you prefer)

Crackers, for serving

Directions:
1. Preheat oven to 400.

2. Place goat cheese in an oven-proof dish, and allow to come to room temperature. Mash goat cheese so that it forms an even layer in the dish. Top goat cheese with raspberry chipotle sauce.

3. Bake in oven until bubbly, about 5-10 minutes. Serve with crackers.
