Mixed green salad with apple, cheddar, and maple balsamic dressing

This is probably one of my favorite salads of all-time. It’s incredibly easy, the dressing is fantastic, and it is always a hit! It’s from a long time ago (I can’t even find the year) – it’s not even available online on Epicurious! That’s a shame – since it’s such a fantastic salad!

Salad with apple, cheddar, and maple balsamic dressing

Mixed Green Salad with Apple, Cheddar, and Maple Balsamic Dressing
Adapted from Bon Appetit
Serves 8

Ingredients:
Dressing:
1/4 c balsamic vinegar
1/4 c pure maple syrup
1/4 c olive oil

Salad:
12 oz mixed green lettuces
2 large unpeeled apples, halved, cored, thinly slices
8 oz sharp cheddar cheese cut into 1/2 inch cubes
1/2 c chopped toasted walnuts

Directions:
1. Combine vinegar, maple syrup, and oil in small bowl. Whisk to blend. Season dressing to taste with salt and pepper. (Can be made 1 day ahead. Place in jar or serving container. Cover and chill. Whisk or shake before serving)

2. Combine lettuces, apples, cheese, and walnuts in large salad bowl. Serve dressing on the side.
