Crockpot Baked Beans

Again, with the crockpot! I know, I know! However, the crockpot really does make this recipe SO easy (and tasty, too!).

This is one of our favorites to bring along to cookouts – it’s vegetarian, but also goes really well with grilled burgers, hotdogs, chicken, etc. Hope you enjoy it, too!

Serves 6

1/2 medium onion, diced
2 tsp canola oil
2 cans pinto beans, rinsed & drained
1 1/2 Tbsp ketchup
1/2 Tbsp mustard
1 tsp kitchen bouquet seasoning
1 tsp low-sodium soy sauce
1 tsp smoked paprika
1 4 oz jar carrot baby food (or steamed carrots, pureed – 4 oz once cooked/pureed)
1 Tbsp brown sugar
1/4 tsp garlic powder
salt, to taste

Saute onion in 2 tsp canola oil in a skillet or in a browning crockpot over medium heat until onion begins browning.

Mix onions & remaining ingredients in a crockpot. Cook on low for about 6 hours, then serve.

Serving Size: Makes 6 servings, 1/2 cup each.
