Warm Quinoa Salad

Although it may not look like much, this is truly a tasty quinoa dish! It’s versatile enough to have as a side with almost any meat or fish, but it’s a bit more dressed-up (and tastier) than just plain quinoa. We had this recently as a side with some tasty blackened redfish – once again, it was a great side!

Warm Quinoa Salad
Adapted from Food & Wine magazine
Serves 4

Ingredients:
1 cup quinoa, rinsed
Warm quinoa salad - rinsing quinoa

1 1/4 cups water
Salt
1 tablespoon extra-virgin olive oil
2 tablespoons red wine vinegar
1 tablespoon honey
1 medium shallot, minced
1/2 teaspoon chopped thyme leaves
Freshly ground pepper

Directions:

In a medium saucepan, cover the quinoa with the water, add a pinch of salt and bring to a boil. Cover and cook over moderately low heat until all of the water has been absorbed and the quinoa is tender, about 12 minutes. Stir and let cool to room temperature.

Meanwhile, in a medium bowl, mix the olive oil with the vinegar, honey, shallot and thyme. Stir in the quinoa, season with salt and pepper and serve.
