Sautéed Baby Squash

It’s so fun to find unexpected veggies and fruits at the grocery store. A few days ago, I found these adorable baby squash – some baby zucchini and baby pattypan squash. They were almost too cute to eat, but I cooked them anyway! They were delicious!

Sautéed Baby Squash
servings vary

Ingredients:
baby zucchini, pattypan, etc.
onion or shallot
olive oil
salt & pepper, to taste

Directions:
Slice squash in half. Place in medium skillet with a bit of olive oil, salt, pepper, and onion or shallot.
Mini squash - pre cook

Saute over medium heat until browned and starting to soften. Serve hot.
