Watermelon Margaritas

It’s summer, and it’s watermelon season! John and I can only eat so much watermelon, so we decided to make drinks with it! We made this drink over the weekend, since we were having friends over. They’re not really wine drinkers, so we thought this would be the perfect cocktail. They LOVED it, so we had to make a second batch!

Watermelon Margaritas
Adapted from Cooking Light, July 2010
Serves 4

Ingredients:
2 teaspoons sugar
1 lime wedge
3 1/2 cups cubed seeded watermelon
1/2 cup tequila
3 tablespoons fresh lime juice
2 tablespoons Triple Sec or Cointreau (orange-flavored liqueur)

Lime wedges, for garnish

Directions:
1. Place 2 teaspoons sugar in a saucer. Rub the rims of 4 margarita glasses with 1 lime wedge; spin rim of each glass in sugar to coat. Set prepared glasses aside.

2. Combine watermelon and next 3 ingredients (through Triple Sec) in a blender; process until smooth. Fill each prepared glass with 1/2 cup crushed ice. Divide margarita mixture into the 4 glasses. Garnish each glass with a lime wedge.

**Note** For frozen margaritas, add ice to blender, then blend and pour into glasses.
