Chipotle Flank Steak with Gorgonzola sauce

I always love anything that has blue cheese, and flank steak is one of my favorite cuts of beef. So, naturally, this was a recipe I wanted to try!

I had some great flank steak in the freezer from Koch Ranches, so I decided to use it for this recipe. The result? FANTASTIC!! We both loved how the Gorgonzola sauce really tempered the spicy rub on the flank steak, and it also really went well with our Pedernales Newsom Vineyards wine, too. We served it with some Grilled Potatoes and a mix of grilled vegetables (fresh eggplant, peppers, & zucchini from the farmer’s market), and it was a fantastic meal!

Chipotle Flank Steak with Gorgonzola sauce

Serves 4

Ingredients:
1 teaspoon ground chipotle chile pepper
1 teaspoon paprika
1/4 teaspoon salt
1 (1.5-pound) flank steak, trimmed
1 teaspoon olive oil
2 tablespoons finely chopped shallots
1 garlic clove, finely chopped
1 teaspoon all-purpose flour
2/3 cup skim milk
1/4 cup (1 ounce) crumbled Gorgonzola cheese
1 teaspoon butter
2 teaspoons chopped fresh flat-leaf parsley

Directions:
1. Preheat broiler to high, or preheat grill.

2. Combine first 3 ingredients. Sprinkle steak with chipotle mixture.

Place on a broiler pan or grill; broil or grill 5 minutes on each side. Let stand 5 minutes. Cut thinly across grain.

3. Heat oil in a saucepan over medium heat. Add shallots and garlic; cook 1 minute. Add flour; cook 30 seconds, stirring. Add milk; boil. Cook until reduced by half. Remove from heat; stir in cheese and remaining ingredients.

**Note** You can sub trimmed sirloin steak for the flank steak.
