Figs with blue cheese and proscuitto

It’s fig season, so it’s time to break out our favorite appetizer! We made these using the figs from our tree, which is even more fun! This is a perfect little snack to have with a cocktail, which is exactly what we had on Friday night. Fantastic!

Figs with blue cheese and proscuitto
Adapted from a restaurant appetizer
Serves 2, 2 figs per serving (increase portions to serve more)

4 fresh figs, stems cut off, hole cut in the middle (for stuffing)
1/2 oz thinly sliced prosciutto (about two slices, sliced horizontally into long strips to make 4 pieces)
1/4 oz gorgonzola or blue cheese

Preheat oven or toaster oven to 425.

Divide cheese equally and stuff into the figs. Wrap each fig with a slice of prosciutto.

Place figs on a small cookie sheet or cake pan. Bake for 10 minutes, until cheese is melting and prosciutto starts to brown. Serve hot.
