Blueberry Bran Muffins

Fresh blueberries are in season, and I am loving it!  I have lots of them fresh, and freeze as many as I  can, too. I got this recipe many years ago from my friend Kaytie, and I’ve been making it ever since. This recipe works well with either fresh or frozen berries, so you can enjoy it year-round.

This is the best bran muffin recipe I’ve ever made – even friends who claim they don’t like bran muffins like these! Plus, these are great for a weekend breakfast, but also great for a breakfast on-the-go. In our case, we made a batch for breakfast one Saturday, then froze the leftover muffins. Then we grabbed a couple of muffins each to have for breakfast on our early morning flight (6am flights… ugh!). Worked perfectly!

Here’s what we did:

Blueberry Bran Muffins
Recipe from Kaytie
makes 12 muffins

1 1/2 cups wheat bran
1 cup nonfat milk
1/2 cup unsweetened applesauce
1 egg
2/3 cup maple sugar (I sub turbinado if I can’t find maple sugar)
1/2 teaspoon vanilla extract
1 cup whole wheat pastry flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 cup blueberries

Preheat oven to 375 degrees F. Grease muffin cups or use paper muffin liners. Mix together wheat bran and milk, and let stand for 10 minutes.

In a large bowl, mix together applesauce, egg, maple sugar, and vanilla. Beat in bran mixture. Sift together whole wheat flour, baking soda, baking powder, and salt.  Stir into bran mixture until just blended.

Fold in blueberries.

Scoop into muffin cups.

Bake in preheated oven for 15 to 20 minutes, or until tops spring back when lightly tapped.
