Grilled Potatoes

So, you probably think you can’t grill potatoes… Or that at least you have to pre-cook the potatoes before grilling… Wrong! It’s easy, and we do this all the time! We recently made these with the Grilled Chicken Stuffed with Basil & Tomatoes, but it really goes with almost anything as a side dish. It is especially fun to do with things like hamburgers (in place of fries), since that way you can make the entire meal on the grill.

Here’s what we did:

Grilled Potatoes
A Karen original recipe
Serves 4

Ingredients:
Russet potatoes, 6 oz each
Spritz of olive oil (I use my misto)
salt
pepper
Or sub other seasoning (I sometimes use a rosemary & sea salt blend)

Directions:
1. Scrub potatoes under running water with a vegetable brush, and cut in half lengthwise. Spritz with olive oil, then sprinkle with salt & pepper (or your favorite seasoning mix).

2. Preheat grill to medium-hot. Place potatoes cut-side down, and cook for about 5 minutes.

Flip potatoes, and continue cooking for about 15-20 minutes, until tender.

3. Remove from grill and eat hot.
