Goat Cheese-Stuffed Dates

Let’s talk appetizers… You want to do something fancy, but dinner guests are on their way over, and you have NO TIME! Ok, maybe you have about 5-10 minutes, but essentially no time. What to do? Try these goat cheese-stuffed dates. Quick, easy, and they even look fancy – not to mention they are FABULOUS! And definitely a favorite in our household!

Goat Cheese-Stuffed Dates
From All You, April 2008
Serves 8 (4 pieces per serving)

Ingredients:
4 ounces goat cheese, crumbled
1 small garlic clove, finely chopped
2 teaspoons finely chopped fresh parsley
1/8 teaspoon salt
16 dried dates, each cut in half, pits removed (makes 32 pieces)

Directions:
1. Combine goat cheese, garlic, parsley, and salt in a medium bowl and mash with a fork until blended.

2. Spoon a heaping teaspoon of cheese mixture into each split date half. Serve dates immediately, or refrigerate, covered, for up to 2 hours, then bring to room temperature and serve.
